4 Schweid & Son’s 75/25 Signature Blend Burger Meat Rolled into 4oz. Balls
2 Cups Frozen Corn
¼ Cup Diced Red Bell Peppers
¼ Cup Diced Jalapeños
¼ Cup Diced Green Chiles Canned
1 Lime, Cut in Half
½ Cup Mayonnaise
4 American Cheese Slices
2 Sesame Seed Burger Buns
Salt and Pepper to Taste
1 Head of Iceberg Lettuce Shredded
Pickle Chips
Ketchup
Mustard
Steps
Pre-heat griddle to high heat. Allow 10-15 minutes, or until the surface darkens and light smoke appears.
Add a bit of Graza oil, then lay the corn and peppers down, and cook until golden.
Lay the lime halves on the griddle flat side down and cook until charred.
In a medium bowl, combine cooked corn mixture with mayonnaise, and squeeze in the charred lime juice.
Then lay the smashburger patties down and follow with the diced green chili next to them on the griddle.
After cooking the burger patties for 15 seconds, smash the meat to flatten using a large spatula or burger press.
After cooking the first side for 1 minute, or until the edges are crispy looking, flip the burger and cook the other side.
After both sides are crispy golden brown, add cheese slices to the burgers. This will act as the glue to hold any broken edges together.
Place the buns down on the griddle for a toasted bun.
Build your burger with the bottom bun, Ketchup, Mustard, Pickles, Shredded Lettuce, then the 1st burger patty, followed by half of the warm green chili mixture, then the other burger, and topped with the Elote corn mixture and the top bun.
